Mexican sweet potato

Today we made Mexican sweet potato. It is a oven-baked sweet potato with creamy corn and beans stuffing.

Wash the sweet potatoes (and bake them in the oven for about 40 minutes)

When the potatoes are ready, scoop out some potato and mix with rest of the ingredients.
