Speckknödel in broth

Knödel are a kind of bread or potato dumplings. Today they were made of bread and pork.
Because of the cubed bread, you would have thought that the dumplings could fall apart when boiling. But they satay well together.
The knödel have their own structure and taste a bit chewy in a good way.

The broth was made of beef marrow.

Ingredients:
  • Bread, onion, lard, parsley, eggs, milk, flour, salt, pepper
  • Beef bone marrow, onion, bay leaves, salt, pepper, parsley
